Spring into Spring!!!

“The first day of Spring is one thing, and the first Spring day is another. The difference between them is sometimes as great as a month.” – Henry Van Dyke

The quote above is especially true this year. Spring officially started on March 20th, but it hasn’t felt much like it with cold, rainy weather and even a little snow.

This entry focuses on celebrating Spring! We are sharing ideas to make the season easier, to bring the flowers of springtime indoors, fun ways to “recycle” Easter candy, and a delicious asparagus recipe.

NO PRESSURE SPRING CLEANING

Make a checklist of everything you want to accomplish for Spring cleaning. Our goal is to complete the list by September! Take pleasure in small accomplishments – use just 15 minutes to organize a drawer or clean the ceiling fan.

OUR PATIO GARDEN

LOOKING FORWARD: We love having a garden on our patio with lots of flowers and a few vegetables. The picture below is our patio today – first day completely snow-free! Check future blog posts for updates!

IN THE MEANTIME: Using one of our tomato cages, we created the “faux flower” (sounds better than fake or artificial) Springtime display pictured at the top of this blog. Still too early to buy flowers for the patio, and real forsythias are not in bloom here yet, but we wanted that flowery feelin’.  We’ve had great fun using our tomato cages indoors (see previous blogs), but are looking forward to using them, as intended, for tomatoes again this summer!

Congratulations to the UCONN woman’s basketball team for winning their 3rd straight national championship! Great weather expected for victory parade in Hartford tomorrow, Sunday the 12th! GO HUSKIES!!

Easter, Passover and March (in April) Madness, Oh My!!!

What a busy week! Easter is early this year, coinciding with Passover and the Final Four games of the NCAA tournaments. Here are some quick, kid-friendly Easter crafts, the “how-to” for a traditional hard-boiled egg game and a different take on classic egg salad for the losing eggs.

CUTE NESTS

We were originally going to make mini Easter baskets with tuna cans as a base, but Kevin thought the tuna cans would make cute nests for Peeps and candy eggs or other items. It ended up being a really easy, inexpensive craft that is fun to do with kids. One of the final results is pictured above.

For each nest you will need: One 5 oz. size empty tuna can, 1/2 pkg. paper Easter grass (not the glossy type) in the color of your choice, craft glue (we used Aleene’s Quick Dry Tacky Glue, but use your favorite), plastic wrap or wax paper.

How to make: Create a ball of grass about one inch wider than the can. Make sure can is clean and dry. If there are any rough edges, cover those with duct tape. Apply a light coat of glue to outside of can. Place can on top of grass and mold the nest around can. Add additional glue to further secure paper grass. Let dry completely before adding grass to inside of can. Add filling of your choice. If you wish to put unwrapped candy eggs or other food in finished nest, line the inside with plastic wrap or wax paper before adding the food.

EGG CRASHING GAME

Kevin’s family plays the egg crashing game every Easter. Here is a link with some more information about it:

POST-GAME SNACK: Though the name is not exactly fitting for the holiday, this delicious recipe is a perfect use for your eggs after the egg crashing game is over. It’s a nice combination of two hard-boiled egg classics. Here’s the link for Rachel Ray’s recipe:

BUNNY BANNER

We saw a cute bunny banner at Kohl’s, liked the idea and came up with our own version. We got a pattern, then traced and cut out the rabbit shapes on a variety of colorful craft papers. We then strung the rabbits on rustic jute, added cute pompom tails, and drew easy bunny faces with a fine-tipped Sharpie. We alternated the images on the banner, front and back. Happy Easter window clings were added for the photo, but we don’t recommend keeping them up as they may stain the wall. This is another great craft for kids, who can color the rabbit cut outs on construction paper rather then using the craft paper. You can also use seasonal gift wrap for the rabbit cut outs. Hippity Hoppity!

LIGHTED EASTER EGGS

We love what we call ” festive party lights” and incorporate them into our decorating whenever possible. Easter is no exception. Kevin came up with the idea a few years ago to light plastic Easter eggs by punching holes in the back of the eggs and attaching them to white or multi-colored Christmas lights. They look great and are easy to do. We used a Phillip’s head screw driver, but an awl or drill would make easy work of punching the holes in the back of the plastic eggs. Most Christmas lights are low temp, but use caution – don’t leave them on when you go to bed, or when you go out. We haven’t had any problems, but we must say, do this craft and any of our other crafts at your own risk!

FINAL FOUR UPDATES

The men’s and women’s NCAA basketball tournaments have reached the Final Four. On Saturday night, Michigan State plays Duke and Kentucky takes on Wisconsin for the chance to play in the men’s finals on Monday, April 6th. The games will be played in Indiana – a state that recently legalized discrimination against gays. Congratulations to the state of Connecticut for refusing to use state funds for any government trips to Indiana (including paying for UCONN men’s head coach Kevin Ollie to go to the Final Four).

The women’s Final Four is Sunday night in Florida, when the top four seeds play – South Carolina vs. Notre Dame and UCONN vs. Maryland. The winners play for the national champoinship on Tuesday, April 7th. We are pulling for UCONN to win its third straight title.   GO HUSKIES!!!

With the coming of Spring and Easter, we are looking forward to nicer days ahead and thinking of all of our family members and friends – those who are with us in person and those who are with us in spirit. We wish all of you a very Happy Easter, Happy Passover, and Happy Spring!!!

BASKETS – for both Easter and the Final Four!

Easter and the Final Four NCAA Championships are approaching. We thought we would share a few ideas for quick and easy Easter baskets. Kielbasa is a traditional Easter staple and we’ve included one of our favorite kielbasa recipes – make sure to have rye bread for dipping!

HATS OFF TO EASTER!                                                                                                                            When Roy was little, a friend gave him an Easter basket in a toy fireman’s hat for his birthday.   (His birthday is March 12 – let’s just say the candy did not last until Easter!) We did something similar by using this inexpensive Easter bonnet as a nest for these chicks, but we think it would make a great Easter basket as well!

SIMPLE BASKETS

To craft the basket above, begin by wrapping the coffee can with festive gift wrap. We fashioned the handle by wrapping a 1-inch wide by 10-inch long piece of cardboard from a shirt box and attaching it to both sides with double stick tape. Fill with grass and add jelly beans, eggs and the candy of your choice. Add a pretty ribbon to finish. This basket could hide a gift like a toy or piece of jewelry underneath the grass.

BOWL BASKET                                                                                                                                                 If you don’t have a basket, you can create a nice handle-free “basket” by putting the gifts in a bowl with some Easter grass and wrapping with seasonal cellophane. We put big decorative eggs in a yellow ceramic bowl. These large eggs can be filled with candy, coins, or whatever gift will fit!

KEILBASA, BEANS AND RICE                                                                                                                       Keilbasa is an Easter staple in Kevin’s family, normally served sliced as an appetizer with mustard or horseradish dipping sauce. The delicious recipe below, which is quick and easy to prepare, makes kielbasa a main dish for Easter or anytime.

Ingredients: 1 Lb. of your favorite kielbasa (chopped into 1/2 in. slices), 1 tablespoon olive oil,   1 small onion – chopped, 1/2 bell pepper – chopped, 1 stalk celery – chopped, 1 can red kidney beans – drained and rinsed, hot sauce to taste, 2 cups low-sodium chicken broth, 2 cups cooked brown rice. (Roy pronounces it “Keilbasa”, Kevin says “Kabasi” – what do you call it?)

How to make: Brown sliced kielbasa in oil. Add onions, peppers and celery. Saute until vegetables are softened. Add beans and chicken broth, simmer until broth is reduced (about 10 minutes). Add hot sauce to taste. Serve over rice. This dish produces plenty of delicious sauce – grab that rye bread for dipping!

SPORTS UPDATE

It’s Final Four time as the men’s and women’s NCAA basketball tournaments drive toward their championships. It will be interesting to see if anyone can knock off Kentucky. The UCONN woman have not disappointed so far. We are Huskie fans – no surprise! In case you missed it, some of our Huskie decor is pictured below.

College hockey’s version of the Final Four (the Frozen Four) also is underway and the East Regional is at the Dunkin’ Donuts Center in nearby Providence. Providence College won their first round game – go Friars!

Marching Madly Towards Easter!

We love March Madness, and we decorated our home accordingly. Sadly, the UConn men, 2014’s national champions, did not make it into the tourney this year. But the women are ranked #1 in the country! Go Huskies!!

Pictured above is Heather Huskie, our UConn Cheerleader doll, showing off her 2 Easter baskets. One is a basketball basket, the perfect combination of March Madness and Easter.   The other “basket”  is a cute Easter hat we got from a dollar store. Adding decorative grass makes this the perfect nest for these cute chicks. Plus, since they are from a dollar store, these chicks were cheap, cheap,  cheap!

We hung our UCONN Huskies blanket as a backdrop for our UCONN stuff. Time for a 3-PEAT!!!

Happy St. Patrick’s Day!!!

We love St. Patrick’s Day! (See the subtle picture above.) For this post, we share a variety of things to help you celebrate this fun holiday.

BANNER:                                                                                                                                                      We make banners for everything! We took these St. Patrick’s Day wall decorations found at a dollar store, hole-punched the sides and strung them together with green and gold ribbon to make this banner. The hats are cardboard and the shamrocks are made of foam.                                   Cute, simple, & economical!

CORNED BEEF AND CABBAGE:                                                                                                               We put our new slow cooker to the test by making delicious corned beef and cabbage. Very tasty and really pretty easy. Here is Martha Stewart’s recipe:

MINTY CHOCOLATE PUDDING:                                                                                                              For a minty treat, add some peppermint extract (to taste) to instant or pre-made chocolate pudding. Want a more grownup dessert? Add creme de menthe. Top with whipped cream and  a sprig of mint! Delicious!!!

Change is good!!!

TRANSLATION OF PICTURE ABOVE: “Don’t forget to change your clocks ahead 1 hour!”             (May not be grammatically correct, but it gets the message across!)

Daylight savings time is upon us, meaning this weekend, we set our clocks ahead 1 hour.     Some folks are not happy losing the hour of sleep, but we’re looking forward to the extra hour of sunshine at the end of the day. We decided that change is a good theme for this week’s blog entry. Change can be difficult, but sometimes change can be fun! You can be creative by changing and adapting things. In honor of upcoming March Madness, we changed some UConn Huskies coasters into a banner! (What a surprise!) We also offer our recipe for Deconstructed Stuffed Peppers. It’s a quick and easy change-up of a classic recipe.

After this winter, the change we are most excited about is Spring! It’s just around the corner!

We’ll make a banner out of anything! This time, we used a hole punch to string blue and white ribbons through these UCONN coasters, creating a simple and festive banner! Go Huskies!

DECONSTRUCTED STUFFED PEPPERS

Kevin’s mom made great stuffed peppers. It was one of her go-to dinners. This one-pot meal brings to mind her classic stuffed peppers, but with a lot less work. It’s delicious and uses canned and frozen vegetables to good advantage.

Ingredients: 1 tablespoon olive oil, 1 medium onion chopped, 1 lb. lean ground beef, one 16 oz. package frozen multicolored pepper strips, 2 cups cooked brown rice, 2 cups crushed tomatoes, one 10 oz. can diced tomatoes with chiles, 1/2 tablespoon garlic powder, 1 tablespoon worcestershire sauce, 1/4 teaspoon dried oregano, salt and pepper to taste.

In a skillet, saute onion in 1 tablespoon olive oil until soft, add ground beef and cook until browned. Drain excess fat. Defrost pepper strips in the microwave for 3 minutes; add to beef and onion mixture. Add both types of tomatoes, worcestershire sauce, garlic and oregano. Add rice and mix well. If mixture seems dry, moisten with low-sodium chicken stock or water. Cover and simmer for 10 minutes. Easy and tasty!

If we wanted to live in Minnesota, we would!!!

We are posting this blog watching yet another Sunday snow storm hit New England. There’s no way around it, this winter has been a challenge. The snow has made driving and parking more difficult, delayed and cancelled many events and caused all sorts of household problems. Personally, we are dealing with ongoing roof leaks in our apartment, and as managers of a storage facility, it has made our jobs much more difficult. A positive is that we are saving money on gym memberships. Chopping ice and shovelling snow are exercise enough! But, we are trying to be patient, looking forward to spring, and finding ways to enjoy ourselves now.

COLLEGE BASKETBALL

One of the things we look forward to each year is March Madness. We are fans of the UCONN Huskies. Some of our UCONN gear is pictured below. Great win against SMU today guys!!!  Next up are the conference tournaments, the men’s and women’s selection shows and March Madness.

IMG_2247GARDENING Last year, we had a great patio garden. We enjoyed planting flowers and had surprising success with our first attempt at growing container tomatoes, especially the cherry tomato varieties.

We were thinking of ways to enjoy the winter. Some folks love this kind of weather and enjoy skiing and outdoor activities. We both broke our legs skiing – enough said!

We are very fortunate to have a great local public library. This year, Roy is taking a class at the Warwick Public Library based on the book, The Artist Way, by Julia Cameron. He is enjoying it very much and it was free. (It’s a great book – highly recommended!) Check your local library websites, they have free or inexpensive classes, shows and discussions – and great books, of course!!!

We love the Academy Awards! Here are a few things we’ve done this year to make Oscar night even more festive!!!

HOLLYWOOD BANNER 

We created the banner shown above using cardboard stars, ribbons and stickers. We embellished them with cutouts from a plastic Hollywood themed tablecloth.

BOW TIE PASTA SALAD (for the well-dressed gathering)

Ingredients: 1 pkg. bow tie farfalle pasta (we chose a vegetable variety for extra color), the juice of 1 lemon, 1 teaspoon lemon zest, 1/2 cup olive oil, 3 tablespoons Italian salad dressing,         1/2 cup grated parmesan cheese, 3 chopped plum tomatoes, 1/2 cup corn, 2 tablespoons chopped chives. Prepare the bow tie pasta according to package directions. Rinse with cold water and refrigerate until cool. Combine lemon juice and zest with oil and salad dressing.     Mix chopped tomato with corn, toss pasta with dressing combo and parm. Salt and pepper to taste. Top with chives. Chill and serve.

RED CARPET CAKE

To create this red carpet cake, we cut an angel-food bar cake into 2 pieces horizontally. We frosted it with 1/2 can of white frosting, colored yellow, using gel food coloring. We topped this with red-dyed coconut. (Our red carpet is shag, baby!!!)

OSCAR TRIVIA GAME

Grab your Trivial Pursuit game and use the Entertainment trivia questions, a fun game for all!

AND THE POPCORN GOES TO – YOU!!  

 An obvious snack choice for Oscar night is popcorn. Make yours more tasty by jazzing it up with your favorite seasonings. Some good choices are parmesan cheese, chili powder and lime juice, garlic powder, sea salt and pepper. Happy St. Valentine’s Day!!!

 

We know not everyone celebrates St. Valentines Day, but we find it a great time to express our feelings to each other, our families and friends. Plus, there’s nothing wrong with a holiday that highlights eating chocolate in the middle of a long, cold winter!

The treasured photograph above is of Kevin’s parents, Warren and Irene Wollschlager, taken in 1946. The red-lettered caption, photoshopped in by Kevin’s niece, Rachel, reads, “Have you ever wondered what true love looks like?”

HEART-SHAPED TURKEY MEATLOAFS                                                                                                       We took our favorite turkey meatloaf recipe and shaped it into 2 hearts (shown above), perfect for St. Valentine’s Day. We used celery to create Cupid’s arrow! Heart healthy hearts!

STRAWBERRIES & BARK                                                                                                                               These were made by dipping fresh strawberries into melted semi-sweet and white chocolate. We made these treats more special by sprinkling crushed red-hot candies on the white chocolate confections and adding classic candy hearts with messages to the semi-sweet chocolate ones. We took the leftover melted chocolate and made bark by spreading it on parchment paper and topping with the leftover candies and dried cranberries.

COLLAGE BANNER                                                                                                                                         We made copies of treasured old black and white family photos and created the keepsake collage banner leading off this blog. Kevin’s mom and dad are pictured on their wedding day and Roy’s mother and father are shown getting ready for one of their Sunday afternoon drives. We added a picture of ourselves at Narragansett Bay to the mix. These photos are grouped with heart shaped doilies adorned with stickers. To finish the banner off, we added a pair of heart shapes, color copied with Roy’s mom’s original watercolor flower painting. We skipped spelling out “Happy St. Valentine’s Day” – this banner’s message of love is clear without it!

OUR DECORATIONS                                                                                                                             We used our old standby tomato cage tree as the center of a St. Valentine’s Day vignette, which includes the banner, red lights and additional trees. In addition, our laundry room door is decorated with a variety of St. Valentine’s cards we have received from family members or made for each other throughout our nearly 17 years together. Kevin attached some of them to 3 cardboard hearts we got from Party City and connected them vertically with a length of chunky red ribbon.

TRIVIA                                                                                                                                                               St. Valentine’s Day is believed to have it’s roots in the ancient Roman festival of Lupercalia, a fertility celebration commemorated annually on February 15th. Love is in the air! St. Valentine’s Day!!!

We love St. Valentine’s Day and thought we would share with you one of our favorite pictures. The art above, which has been in Roy’s family for many years, shows Cupid asleep, perhaps after a busy St. Valentine’s Day. Let’s get creative!

HEART FRAME:                                                                                                                                           We took a picture frame and covered it with heart stickers. A flat surface frame works best. It’s a quick, easy and fun craft. Also, this craft project is very inexpensive – all the items in this photo came from a dollar store. Kids can do it and it makes a great gift! Put in a photo, drawing, or a favorite quote. (“Onward and upward together” is one of our personal mottos.)

KUDOS TO KENDRA!                                                                                                                               Our crafty friend Kendra creates beautiful wreaths, including this lovely spring wreath. She got all the materials she needed at Michael’s. Kendra used silk flowers (Hydreangas, Morning Glories and Queen Ann’s Lace) on a grapevine wreath finished with a pretty cream-colored burlap ribbon trimmed in gold.
